1. Assorted veggies - onion, carrot, beans, brocolli(1.5 cups). 2. Chopped garlic - 6-10 cloves. 3. Protein- Paneer 200gms. 4. Butter - a heaped teaspoon(unsalted) 5. Basmati rice - 2 cups 6. Soya Sauce (low sodium) - 2 table spoon 7. Chilli sauce - 2 tea spoon 8. Oyster sauce - if you eat seafood(optional) 9. Salt n Pepper as required.
10. Marinating Paneer: Chilli powder, Garam masala, ginger garlic paste, added some chicken masala too + curd
Add oil to a wok/nonstick pan and fry your veggies in high flame.
High flame gives your crunchy and cooked veggies which is key to a good fried rice.
Make some space in the center of the pan and add some butter and put in the paneer and fry it up.
Add salt pepper and your sauces.
If you wanna add any fried rice masalas this is when you will add them(check the salt content though)
Use left over/chilled rice. Or if you are making a fresh batch pop it in the refrigerator for 30 minutes. Nobody likes mushy fried rice no?
Add the rice and let it sizzle. Give it a couple of minutes on the pan.
Push the rice to one side of the pan and break the eggs and scramble them. Mix them all together and serve.
You can mix a spoon of soya sauce or sesame oil before serving.
