Prawn Ghee Roast by Sumera Kausar

Prawns are marinated with curd, turmeric, and lemon juice and shallow fried to get the juicy and gentle prawns and cooked inside the freshly ground spices, this spice masala performs a large function in getting the signature flavor for this prawn ghee roast recipe.

  • 500 grams Prawns

  • Yoghurt (2 tablespoons)

  • Red chilli powder (1 tablespoon)

  • Turmeric powder (½ teaspoon)

  • Salt (½ teaspoon)

  • Coriander powder (1 tablespoon)

  • Cumin seeds (½ teaspoon)

  • Black pepper (1 teaspoon)

  • Mustard seeds (¼ teaspoon)

  • 6 to 8 red chillies

  • 8 to 10 garlic cloves

  • Tamarind pulp (1 tablespoon)

  • Ghee (2 tablespoons)

  • Oil (as required)

  • 8 to 10 Curry leaves

Prawn Ghee Roast recipe in three steps

1. Marinating prawns

Clean the prawns with warm water, wash and pat them dry. Take a bowl, and marinate the prawns by mixing them with 2 spoons of yoghurt, red chilli powder, turmeric powder and Salt(as required). Set them aside for 20 minutes!

While waiting here, go for the next step making the chilli paste!

2. Special chilli paste

Heat a pan and add 6-8 chillies, coriander seeds, cumin seeds, black peppercorns and mustard seeds. Toast them for a minute and let it cool. Grind the mixture along with 8 to 10 garlic cloves, tamarind pulp and a slight amount of water(for consistency). Grind them until you get a smooth paste out of it!

3. Start cooking!

Now heat a non-sticking pan, add 2 tablespoons of ghee and the marinated prawns. Stir fry for few mins until it's partially cooked and add the chilli paste to the mixture. Fry and mix them well until oil gets separated. Now add 10-15 curry leaves and toss it for a minute!

It's done! Serve it along steamed rice or pulav for weekday meal.
